The AA publish a series of books called
Pub Walks and Cycle Rides for several regions Amazon sell them so do a search at Amazon looking for the above series title
I have the South Downs and South Coast one and it does cover non tarmacced trails

Cycling without Traffic: The Midlands and Peak District by Nick Cotton is pretty good.
The Tissington Trail is a good ride and is not a million miles away from Leamington.
